The founder of MEAT FREAKS, Joel Lee Moses, started cooking at the age of Seven, preparing breakfasts for his brother and soon realized this would be his passion . . . .

Joel started preparing & cooking meals at the family home, whilst at a very young age and would source all the ingredients himself to ensure freshness & quality to create the perfect plate that he would be proud of serving, and that his family would enjoy eating. He enjoyed cooking meals at extended family and close friends  . . .

Joel soon realised that the career he wanted to pursue was to be a chef . . . . . . .

Joel trained in France at the Paul Bocuse Institute and has gathered experience in many well known kitchens in UK, USA, France & Italy.

After years of experience working as a chef in high class restaurants as well as 5* hotels, Joel started his journey to research varieties of the humble burger. His travels included New York, Texas, California, London (His home town) and Berlin to name but a few, to find the best variety to fulfill his vision of the main menu item for his kitchens . . . . .

In order to create the best burger, MEAT FREAKS uses 100% wagyu beef, freshly minced ourselves to a 80%/20% meat to fat ratio for the juiciest tasting burgers we’ve tasted. . . . . . .

Having tested and tasted numerous meat cuts, as well as the proportion of fat, our wagyu beef, ground in our kitchens have the ideal 80% / 20% ratio for the perfect, tasty & juiciest smash beff burgers.

Cooking methods are the second most important factor, after the chosen meat. having experimented with ‘normal’ burgers, cooked over a fire or on a griddle, as well as a smash burger cooked on a very high heat on griddle, the caramelization of the meat made this a no brainer for taste. . . . .

Creating the tastiest burger requires the ‘perfect’ bun. After numerous recipes, we decided to use a brioche bun, sourced to our recipe and toasted to ensure all the juices stay in the bun . . . . .
